Ingredients<\/strong><\/p>\n

3 medium eggplants
\n1tsp sugar
\n1 tbsp rice vinegar
\n2 tbsp fish sauce
\n1 chilli, deseeded and finely chopped
\n1 tbsp vegetable oil
\n4 garlic cloves, chopped
\n1\/2 cup basil leaves, roughly chopped
\nCracked pepper to add flavour<\/p>\n

Method<\/strong><\/p>\n

Grill the eggplant until it is blackened and blistered on all sides. For best results, cook the vegetable on a\u00a0barbecue\u00a0or on an open flame.<\/p>\n

While the eggplant is cooking, mix the sugar, vinegar, fish sauce and chilli in a mixing bowl until the sugar has fully dissolved.<\/p>\n

Allow the eggplants to cool before peeling and removing the seeds. Cut into long strips.<\/p>\n

Burn off the garlic in a hot wok, adding the eggplant and vinegar mixture. Mix well. Add the basil leaves and serve.<\/p>\n

Serve with boiled rice.<\/p>\n
